Does anyone know if we can get 17 1/2 inch rims? I have been reading on other forums that 5ers that big/heavy should be on the bigger rims and G rated tires at least. Anyone know if that is true?

16 inch rims are fine, now G rated tires are a must.
As far as i'm concerned they should be standard issue on ALLunits of this size

Agreed, once you get into the heavier weights, I would insist on G range tires.

The other thing I will get is disc brakes..

For sure, we will get the G rated tires and disc brakes, and my DH will make sure the tires are Michelins, even if we buy them aftermarket.

To the best of my knowledge, Michelin does not make a "G" rated tire in a 16" size. I think you would have to go with Goodyear G614 which is a trailer tire.

Yes, the Goodyear 614 is specifically designed for trailers like a 5er it's a LT235/85R16 and as far as I know the only G rated LT tire available.http://goodyearrvtires.com/tire-selector.aspx
