Modifications/Dining Table 36RE

We have a 2012 36RE and removed the dining table. We now see that the Redwood offers a buffet option but apparently the 2012 model doesn't have the structure behind the wall for their buffet. Has anyone else with a 2012 RE modified the dining area? Attached is a picture of what I want to do but it seems like my window openings would be in the way! Any suggestions/feedback would be greatly appreciated!

We're going to pull out our Pre-updated table and install some additional storage and some sort of a desk. We honestly never eat at the table, we use TV Trays for that.

I'm torn - Ours is real plain looking in that corner without the buffet, but the buffet would be a pain for the three of us.

I've seen some with a much lower window and a nice wainscot in that slide. It looks nice.

We havea2012 36RL. We took the table out and replaced it with a free standing pedestal.
