Houston isn't really "south Texas", so if you go to the Brownsville area, you will find plenty of sites that cater to the 55+ crowd as far as activities go; but that is a bit of a stretch in miles from Houston.
Our favorite spot, is either Brackenridge Park and Campground OR Lake Texana Park, which is right across the street, near Edna, TX which puts it at 104 miles from the center of Houston.
These two parks are beautiful. They are set on the shores of Lake Texana and have trees and also are a wildlife sanctuary. We were lucky enough to see small herds of deer almost every morning and dusk frolicking near us on several occasions. It was a delight to watch. Plenty of hiking trails, bike trails, some other sporting activities including fishing.
There is no public pool or hot tub. You have the lake to swim in, however, there are signs up - do not feed the alligators! (so, we stayed out of the water) There are activities most weekends - you can find those during your stay. There is a HUGE Recreational Complex just adjacent to both parks entrances that has an event going on almost every week-end.
We are spoiled by this park and use this as a thermometer to rate other parks in size of lots, FHU's WiFi and such (doesn't have cable but the wildlife shows going on outside are pretty darn entertaining!).

Our picture in our signature was taken at one of the stays there. We stayed at one of the pull-thru's many times and have stayed at other sites at both campgrounds. We love it there and go there often.
